When potatoes are on sale, make this:
One big onion, diced
10 potatoes, peeled and cubed
3-4 carrots
2
boullion cubes (chicken or beef)
Salt and pepper to taste
Saute the onion until it is transparent. Add other
ingredients except seasonings. Add water until potatoes are barely covered. Add seasonings. Cook for 1 1/2
-2 hours. Eat it as it is, or mash up the potatoes.
Hobo dinners
1 large potato
2 Tbsp Extra Virgin Olive Oil
1 Center Cut Pork Chop approx
1/2 inch thick (substitutes - ground beef, chicken)
1/2 onion sliced
1/2 green pepper sliced
dash of worchestershire
sauce
dash of onion salt
dash of garlic salt
pepper to taste
pat of butter
Brown pork chop in skillet with
a little bit of extra virgin olive oil (if you are not into healthy and virgin oil is expensive, use canola or vegtable oil)..
Set aside. Place sliced potatoe, onion, and green pepper in the middle of a generous sheet of aluminum foil. Place the Pork
chop on top of the potatoes. Sprinkle entire pkg with dry seasonings and worchestershire sauce. Top with a pat of butter.
Fold aluminum foil over and crimp to make air and liquid tight. Repeat for however many pork servings you want.
Can add sliced carrots, mushrooms and celery at times too for a real taste treat. These can be frozen individually or....
buy the meats on sale and get as many as is affordable to your budget. Place several in a large sealable
plastic bag and take out however many I need at a time.
Preheat oven to 350 degrees and place foil package crimped side up on cookie sheet. Bake for around an hour or
so. Do not puncture the foil pouch to avoid spills or flames from the flammable oil and butter in your oven; better
yet cook it on a cookie sheet or pizza pan or other bakeware you use in your kitchen.
Tater Tot Cassarole
1 lb. hamburger
1 can soup 15 oz(?)(cream of mush.,
cheese, or tomato are our favs)
1 or 2 onions- sliced, chopped or diced. Your choice!
salt and pepper to
taste
line pie plate with hamburger.
Add Tater Tots evenly over meat.
Add onion evenly.
Salt & pepper
to taste.
Pour soup over top.
Bake 30 -45 min @ 350 until meat done & soup bubbly!
You can chop and brown
the meat in a skillet. While this is going, line the pan with tater tots and mash them so that the pan is completely
lined (form a kind of crust so goodies don't leak out!). Ddrain meat and add it to pan, add onion, seasoning and soup
and bake for about 20 - 30 min. or until tater tots are browned. You can throw in other veggies if you have just a few left
over - no
need to throw them out..
Creamy Mustard Pork Chops
4 boneless pork chops, 3/4" thick
1
1/2 tsp. lemon pepper seasoning
1 tbsp. butter OR margarine
1 can (10 3/4 oz.) Campbell'sŪ Condensed Cream of Mushroom
Soup or use reduced fat cream of mushroom soup
1/2 cup milk
1 tbsp. Dijon-style mustard
1 tbsp. chopped fresh parsley
Directions:
SPRINKLE chops with
lemon pepper seasoning. Heat butter in skillet. Cook chops 10 min. or until browned. ADD soup, milk and mustard. Heat to a
boil. Cover and cook over low heat 10 min. or until chops are done. Sprinkle with parsley. Serves 4.
TIP: Serve with egg noodles and your favorite steamed vegetable. For dessert
serve chunky applesauce topped with
cinnamon.
For a little variety, substitute other herbs for the parsley. Try an equal
amount of chopped fresh cilantro
or chives, or 2 teaspoons of fresh thyme.
